White leghorns not sitting on eggs?

I have 4 white leghorns and a roster. My chooks are not sitting on their fertilized eggs! Are we going to have to incubate them? My chooks sit on their eggs at night, but leave them all day long. I heard that you can hatch the chicks then in the night when they are asleep you can take the eggs out from underneath them then put the chicks under (I think it's suppost to make them think the eggs hatched). Does this work. We aren't around in the day enough to raise the chicks by hand. What should I do? Also, can you please put some cheap home-made incubators?
